Here are a few notes about the ‘que:
Tenderness-
- Ribs-They were out of ribs.
- Shoulder-was moist and tender, but lacked enough bark.
Smoke-
- Ribs-They were out of ribs.
- Shoulder-Was slightly smoky. I would’ve enjoyed more smoke flavor, especially for a self-named smokehouse. The total combination of sauce, slaw and meat was good though.
Sauce-The flavor and consistency of the chunky bbq sauce resembled baked bean sauce, which surprisingly worked well with the pork.
