I went to Pig-N-Whistle BBQ at the older Bartlett location. This older Memphis bbq standard now resides in Millington, TN, also just outside of Memphis. Check back in the future for a full review. Quick-Fire Guide:
Here are a few notes about the ‘que:
Tenderness-
- Ribs-Were tender and mostly moist, but dry in parts.
- Shoulder-Was moist and tender with bits of well-seasoned bark.
Smoke-
- Ribs-Had nice wood smoke flavor, but were too salty.
- Shoulder-Had nice smoke flavor as well.
Sauce-Was sweet, balanced with a good deal of tanginess, which worked particularly well with the shoulder.
