Cabo San Lucas
Tacos al Pastor-Chile marinated and roasted pork with pineapple and onion. The more traditional “trompos” like this one we stopped at in Cabo, are cooked in front of wood coals. It’s the tall cylinder of sliced and stacked pork in the slideshow below. Pastor may look similar to Greek gyros, but the flavors and typical condiments are quite different. These tacos are served with the pastor meat, pineapple, onion, lime and usually cilantro. Additional condiments, such as guacamole, pico de gallo and various salsas are typically available as well for dressing up the taco. (Hover the mouse pointer over the slideshow for controls).
