Moma’s B-B-Q stands to prove that bbq, barbecue, barbeque, bar-b-q and bar-b-que can be spelled yet one more way. Otherwise, Moma’s in Bartlett is basically like the Memphis chain-Tops BBQ, only, not as smoky. It’s also a sandwich-only place (no ribs). Check back in the future for a full review. Here are a few notes about the ‘que:
Tenderness-
- Shoulder-was tender and moist-not at all dry. But I would have enjoyed more bits of bark mixed through the mostly white meat.
Smoke-
- Shoulder-Very light smoke flavor. I like more smoke.
Sauce-tangy style, probably the same kind of Blue Plate bbq sauce that Tops BBQ uses.
Slaw-tangy, sweet, finely chopped, but still crunchy. It complimented the pork.
