Quick-Fire Guide:
Here are a few notes about the ‘que:
Tenderness-
- Ribs-Were Tender, and had a very well seasoned bark. The meat was a bit dry and chewy in places, but still had enough moisture throughout most of the slab to eat without struggle.
Smoke-
- Ribs-Had decent smoke flavor. I would’ve like more smoke on the meat, but good nonetheless. The savory seasoning in particular worked really well with the rib meat. It was probably some of the best bbq seasoning I’ve ever tasted.
Sauce-I had dry ribs, but I enjoyed the tangy sauce for dipping a little here and there.
BBQ Pork Skins-The house-made bbq pork skins made the perfect savory, crispy and smoky snack for our road trip.
