Tucked on a backstreet in an older neighborhood along Summer Ave and White Station there once stood a hidden bbq joint with a drive-thru and Tuesday barbecue buffet. You may not have seen Jack’s Bar-B-Q Rib Shack “in lights,” but I had some good ‘que from there. I always heard mixed reviews about Jack’s, both before and after my visits, but from my two experiences, the meats had good smoke and wasn’t dry. The sauce was tangy and only slightly sweet. I thought it complimented the pork sandwich. The ribs, which I ordered dry, had the best smoke flavor between the two, as well as a flavorful bark exterior. I wouldn’t have placed Jack’s in a top ten list, but I regret that he closed his doors. Don’t miss my Quick-Fire Guide below. Here are a few notes about the ‘que:
Tenderness-
- Ribs-Were moist and tender with a flavorful bark exterior.
- Shoulder-Was tender and moist.
Smoke-
- Ribs-Had great wood smoke flavor.
- Shoulder-Had nice wood smoke flavor.
Sauce-Was tangy, only a little sweet and complimented the sandwich.
Slaw-Was a standard finely chopped slaw with a little sweetness and tanginess.
