Here are a few notes about the ‘que:
Tenderness-
- Shoulder-Was tender and moist. The smoked pork on the pizza came from the brother of the owner, who has competed on the bbq competition circuit.
Smoke-

Sauce-Was a sweet-style bbq sauce that I thought complimented the bbq pizza well.
Crust-Was thin and crisp on the outside, but soft and pliable inside.

You’re welcome Spencer. It’s been a few years since I stopped in. I’d like to make a return visit soon to get more pictures of the pizza, since I lost the original photo files due to theft. Also, I hope to get more up-to-date information about the source of the smoked shoulder that goes onto the bbq pizza and maybe learn more about the sauce and crust as well. I got my information from the man who served me the pizza. I can’t remember if it was you, but on my next visit, I’d like to get more complete info.
