Here are a few notes about the ‘que:
Tenderness-
- Ribs-were ideally tender. The meat pulled easily from the bones, didn’t fall apart. The ribs also had a well-seasoned and well-developed bark.
- Shoulder-was moist and tender with bits of bark/crust mixed throughout.
Smoke-
- Ribs-great wood smoke flavor.
- Shoulder-some wood smoke flavor.
Sauce-slightly sweet, but mostly spicy and tangy-complimented the pork well.
