Notes: LC’s Bar-B-Q in Kansas City Missouri was one of two of my favorite bbq joints in KC. The pit setup allows meat drippings to fall onto the coals, producing a particular type of smoke flavor not achieved with indirect smoking. LC also adds wood for a complete bbq taste. I got to talk to him briefly and told him that his place and style of barbecuing reminded me of Cozy Corner BBQ in Memphis. Of course, beef bbq plays second fiddle in Memphis, where pork is bbq king. But the type of smoke flavor is quite similar between the two. I hope to get the opportunity to return to LC’s Bar-B-Q for some ribs.
