This bbq kiosk inside the Memphis Zoo didn’t last for very long, but I’m not sure why. We actually enjoyed it, especially because the meat was actually wood-smoked on site. Here are a few notes about the ‘que:
- Shoulder-Was tender and moist, with well-developed exterior bark.
- Shoulder–The pork on my bbq sandwich had fully balanced wood-smoke flavor.
Sauce-a standard sweet and tangy bbq sauce, with enough tanginess to compliment the smoked pork.
